I Like to Cook . . . Sometimes

It may not happen often, but sometimes I do like to roll up my sleeves and bake.

I am not Martha Stewart.

There have been times when I’ve wanted to really get into my kitchen and cook, but those are few and far between. The busyness of life – work, taking care of a toddler and trying to maintain my house – means I don’t have much energy left for cooking. So, we make dinners that are easy yet family favorites.

But, the other day, I really got in the mood to cook. So, cook I did! I made a batch of spicy black bean soup (as in not from the can), guacamole, mini pineapple upside down cakes and some cupcakes with the leftover batter. I was pretty impressed. The soup wasn’t spicy enough (next time I will definitely have to add the onions and jalapenos that the recipe calls for) but was delicious and filling. And the pineapple upside down cakes? I didn’t really know what to expect because I had never made such a dessert before, but they were fabulous. I was pretty impressed with myself.

I just hope my husband doesn’t get used to it!

There was a contentious meeting last night at Holly Springs City Hall between residents of The Springs, representatives from the Cherokee County government and representatives from the Cherokee Soccer Association. We’ll have that story at 7 a.m.
